Ingredients

  • 8 oz. 230 g frozen mango, diced
  • 8 oz. 230 g frozen strawberries
  • 1 cup (613 oz.) 240 ml (180 g) full-fat Greek yogurt (4% fat)
  • ½ cup 120 ml heavy whipping cream
  • 1 tsp 1 tsp vanilla extract

Making low carb simple

Instructions

Instructions are for 12 servings. Please modify as needed.

  1. Thaw mango and strawberries a little at room temperature for 10–15 minutes.

  2. Put all the ingredients in a blender and blend until smooth.

  3. Serve immediately as soft serve ice cream or pour into popsicle forms and freeze for at least two hours. If you have an ice cream maker you could also use that, following the manufacturer's instructions.

    For soft serve is o.k. But thawed fruit to freeze again is not good. For this is better to use fresh fruit (berries).

    How about a dairy-free version?

    For a dairy-free version you can substitute the cream and yoghurt for coconut milk, it's just as delicious!

    I don't care for mangos. Will the carb count be simular if I use all strawberries or raspberries instead of the mangos?

    If you use coconut milk instead of heavy cream and yogurt I'd add some lemon juice, too, to make up for the tanginess of the yogurt. If you use all strawberries or raspberries the carbs will be lower and depending on your tastes you might want to add a few drops of stevia since mango's sweeter.

    The recipe has not been tested with sour cream, but you might try it. I am not sure how sour cream, with a thicker consistency, would freeze.

    Hi Aaron! Those molds are super cute, but the photo was taken several years ago and we are not certain where you can find them now. You might search online for popsicle molds.

    That's a great idea! Just keep in mind that using different fruits can change the macros.

    Yes, unsweetened coconut milk can be a part of keto. Just be sure to watch the carb count!
