This recipe for garlic Parmesan roasted asparagus is so easy to make and it’s soooo good! Did you know asparagus is in season from February to June? I didn’t know it started so early! Apparently April is prime season, so get that asparagus cooking soon!

I’ve found myself in a bit of a vegetable rut lately. I keep buying the same 5 vegetables on repeat each week (baby carrots, broccoli, green beans, asparagus and … wow, I guess it’s only 4 vegetables?!) and I cook them exactly the same way. Every. Single. Week. My kids are picky, so they don’t really let me experiment with sauces or anything that has flavour.

I decided to branch out this week and try garlic Parmesan roasted asparagus and it was a big hit! Roasting it in the oven ended up being super simple, and the combination of garlic and Parmesan cheese with the asparagus was delicious!

I used the powdered type of grated Parmesan cheese that comes in a tub because… well… it’s easier than grating it myself. I guarantee if you go to the effort of grating your own fresh Parmesan cheese it will taste even more amazing!

But my weeknight dinners are usually pretty rushed, so I like to keep things as simple as possible. Plus I really like the taste of the finely grated Parmesan cheese on my vegetables! And pasta. And salad. It’s safe to say I’m a fan of Parmesan cheese in general, no matter what form it comes in!

Garlic Parmesan Roasted Asparagus

The full printable recipe is at the end of this post, but here’s what you’ll need:

  • Asparagus
  • Garlic
  • Parmesan Cheese
  • Cooking Oil (I use Avocado oil)
  • Pepper

I chopped the fresh garlic instead of mincing it because the garlic that comes out of my garlic press usually ends up in a large clump – which wasn’t what I was going for? I’m sure it would still work, I just wanted to make sure I could really spread the garlic out evenly.

Helpful Asparagus Tip:

Can I give you my FAVOURITE tip for making asparagus? Seriously, this was a game changer for me when I learned this:

Instead of chopping off the woody ends from the aspagarus, break each end off instead. The asparagus naturally snaps at the point where it becomes tender and you’ll never have to deal with the tough ends making it into your dinner again!

Line a baking sheet with parchment paper. Then spread the asparagus in an even layer on top of the parchment paper.

You can use your cooking oil of choice here. It doesn’t really matter what type it is. I’m a HUGE fan of avocado oil. These days I use it for nearly everything.

Drizzle the asparagus with cooking oil, then (carefully) shake the baking sheet from side to side, rolling the asparagus slightly to make sure it’s coated with oil.

Then sprinkle the Parmesan cheese and garlic evenly on top. Add some freshly ground pepper as well, if you like.

I find the Parmesan cheese has enough salt in it and that it doesn’t need any extra, but it will depend on your tastes. Feel free to sprinkle a little salt on top if you like.

Bake it in the oven at 425F for about 10 to 14 minutes until the asparagus reaches your desired level of doneness. Remember, thicker asparagus will take longer to cook, and super thin asparagus might be done in as little as 8 minutes – So you’ll have to keep an eye on it.

I cooked the asparagus you see in the photos for 12 minutes. I like my asparagus cooked through, so the stalks were bendy when I picked them up. If you like your asparagus firm, with a bit of a crunch and more al dente, you’ll want a shorter cooking time.

Garlic Parmesan Roasted Asparagus

With only a few ingredients you can make this easy side dish in 15 minutes!

Servings: 4 servings

Ingredients

  • 1 bunch of asparagus 1/2 pound to 1 pound
  • 1-2 Tablespoons grated Parmesan cheese
  • 2 cloves minced garlic about 1 Tbsp
  • 1 Tablespoon cooking oil
  • Pepper to taste

Instructions

  • Preheat the oven to 425F. Line a baking sheet with parchment paper.

  • Wash the asparagus thoroughly and break off the woody ends from the asparagus stalks.

  • Lay out the asparagus in a single layer on the baking sheet.

  • Drizzle the asparagus with cooking oil, then gently shake the pan from side to side to roll the asparagus until it's coated with oil.

  • Sprinkle the Parmesan cheese, garlic, and pepper evenly on top.

  • Bake at 425F for about 10 to 14 minutes or until your desired level of doneness.

  • Enjoy!

Notes

I like to use Avocado oil for all my cooking, but any type of cooking oil will work.
